My Bruschetta recipe with mozzarella has to be one of the simplest recipes on the planet and it turns out SO good! The best part is that it uses ingredients you probably already have in your kitchen too. Bruschetta recipe, a culinary gem that’s easy to make using common kitchen ingredients. Perfect for a quick, tasty treat.
You can use any kind of tomatoes for this recipe but I love the taste of cherry tomatoes, they’re super sweet and in season at the moment too. If I’m feeling like indulging then I’ll enjoy my bruschetta with mozzarella pearls too!

Bruschetta
Ingredients
- 500 g cherry tomatoes
- 2 garlic cloves grated
- basil handful
- 4 tbsp olive oil extra virgin
- salt
Instructions
- Using a serrated knife, slice your baguette into 1 ½ inch pieces, coat with olive oil and toast on a pan until golden brown. Set them aside once done.
- Slice your cherry tomatoes and add them into a bowl.
- Grate in your two garlic cloves, reserving some of the garlic to rub on the toasted bread later.
- Chop your basil roughly and add to your tomato and garlic mixture. Along with the extra virgin olive oil. Season with salt and pepper, stir well.
- Rub the reminder of the garlic cloves on your sliced baguette and top them with your tomato mixture. Now all that's left to do is enjoy your bruschetta!
