Spicy Chicken Tikka Masala is probably one of my favourite things to eat, the flavours are just divine and the chicken so tender. If you’re reading this, then you immediately need to bookmark this recipe to give a go later, I promise you, you won’t regret it.
The Ingredients Of Tasty Chicken Tikka Masala
My Chicken Tikka recipe uses a mix of Indian spices, most of which you should be able to find at your local supermarket. However I’d recommend paying your local South Asian supermarket a visit because they offer great value for money when buying these spices. The only spices you may struggle to find at a regular supermarket would be the red Kashmiri chilli powder, tandoori masala powder and red food colour which I love to use to give the chicken that beautiful rich colour. You need the tiniest amount of red food colour and be careful because it really stains so take caution when opening it (I learnt that the hard way haha)
Now the key to this recipe is MELTED BUTTER. Yep, you heard me. Not a special oil or a special blend of spices, although the spices are pretty important, but just good ol’ melted butter. The butter makes the marinade ten times better and is a non-negotiable. As well as incorporating melted butter in the marinade, once the chicken is cooked, I like to brush the skewers with melted butter whilst still hot.
TIPS FOR SPICY CHICKEN TIKKA MASALA
- Ensure the chicken is cut into equal sized piece so that it cooks evenly and all within the same time, otherwise you”ll end up with some overcooked bits and some cooked perfectly!
- Use salted butter, it really enhances the flavour of the spices.
- The tandoori masala powder is a remade mix of spices any brand will do but I love Shan’s
- Greek yoghurt as opposed to plain yoghurt is best because its lovely and thick and will form a better consistency for the marinade.
- Marinate your chicken for as long as possible, ideally overnight but this isn’t always possible, the minimum time I’d recommend for the flavours to really develop is 2 hours.

Chicken Tikka
Ingredients
- 2 chicken breasts cubed
- 2 tbsp garlic paste
- 2 tbsp ginger paste
- 3 tbsp greek yoghurt
- ½ tbsp red kashmiri powder
- ½ tbsp cumin powder
- ½ tbsp garam masala
- 1 tbsp tandoori masala powder
- ¼ red food colour
- salt to taste
- 4 tbsp melted butter
- 2-3 tbsp melted butter to brush on cooked skewers
- coriander to garnish
Instructions
- Into a large bowl, add your cubed chicken, greek yoghurt and melted butter. Mix well and place in the fridge to marinate for a minimum of 2 hours.
- Preheat the oven to 200° 15 minutes before removing the chicken from the fridge.
- Remove from the fridge and skewer the chicken.
- Place in the oven to bake for 30-40 minutes, turning over at the half way point.
- Once cooked, brush with the remaining melted butter and garnish with coriander.
