What’s inside the bagel?
The beauty of my Vegetarian Breakfast Ideas bagel recipe is that there are no hard and fast rules. You can customise it and switch out certain ingredients to suit your taste. Here are my ultimate breakfast bagel fillings:
- Avocado– super creamy
- Rocket– because health,
- Hashbrowns– potatoes are life and the addition of these helps make this bagel super filling!
- Mature Cheddar cheese– melts really well and has adds a beautiful tang! To melt the cheese I used a blow torch but you could easily use the grill instead and still
- Fried egg– organic and free range always! I like my yolks to be rich in colour, the best eggs that fulfil my criteria are Clarence Court Eggs however I’ve recently found a cheaper alternative in Tesco Finest Chestnut Maran eggs, both feature a golden yolk that tastes divine!
Method By Vegetarian Breakfast Ideas
- Begin by popping your hash browns into your air-fryer or oven and cook at 200° for 15 minutes
- Lay your bagel flat on your chopping board and using a serrated bread knife cut horizontally through the middle using a sawing motion.
- Toast your bagel either on the pan with some oil (my preferred way to do it!) or in your toaster
- Crack your egg into a preheated pan with some oil, reserving the egg yolk in the shell. Fry the whites for 2-3 minutes on a medium heat.
- Place your bagel lid ontop of the egg whites and gently place your egg yolk into the hole in the middle. Add a splash of water into the pan, cover with a lid and cook for a further 2-3 minutes.
- On the bottom of your bagel, spread the avocado, season with salt, black pepper and paprika.
- On top of the avocado, add your rocket and hash browns. Place your thin slices of mature cheddar on top of the has browns and melt with a blow torch or by placing under the grill.
- Crown with your egg-bagel lid and enjoy!
