Mango season is underway so lets make my delicious mango and white chocolate cookie dough…in the Air Fryer!
I used a Ninja Airfryer with a circular basket but you can use whatever brand you own! Just make sure to grease the basket with butter and line with parchment paper.
Tips For Delicious Mango and White Chocolate Cookie Dough
- Use both white and brown sugar for a greater depth of flavour!
- As tempting as it may be, do not use the all in one method. Instead cream together your butter and sugar with a electric whisk first.
- Set your Air Fryer to 150 degrees Celsius, everything cooks a lot quicker in an air-fryer so make sure that you set the temperature a little lower than you would for your oven.
For the topping of my Mango and White Chocolate Cookie Dough I used melted white chocolate, mango pulp and mango chunks! Since mangoes are now in season there are a HUGE variety of mangoes to choose from. Alphonso mangoes are, in my opinion, the sweetest and most delicious variety of mangoes. You can find them in your local South Asian grocer.
Ingredients For Mango White Chocolate Dough
- 100g butter
- 70g light brown sugar
- 70g caster sugar
- 1 egg yolk
- ½ teaspoon vanilla extract
- 100g flour
- ¼ teaspoon bicarbonate of soda
- ½ teaspoon salt
- 100ml mango pulp for inside the batter and 100ml for decorating
- 200g white chocolate chunks for inside the batter and 150g melted white chocolate for decorating
- 1 mango
Method
- Begin by greasing your air-fryer basket with some room temperature butter and then line it with a circular piece of parchment paper
- For the dough: cream together butter and sugar with an electric whisk
- Add in the flour, egg yolk, salt, bicarbonate of soda and mango pulp. Give the batter a good stir.
- Add in the white chocolate chunks and stir until they are fully incorporated into the batter
- Transfer your cookie dough batter into the lined air-fryer basket
- Bake at 150 degrees for 20 minutes
- Allow to cool for 5 minutes before decorating with mango pulp, melted white chocolate and mango chunks.
