Papdi Chaat Recipe

Papdi Chaat Recipe is my favourite Indian street food snack and definitely one that you can make at home! It’s a dish I are up eating and so I am so excited to share this recipe with you all and hope that you love it as much as I do.

Ingredients For Papdi Chaat Recipe

Here are the ingredients to make my delicious papdi chaat recipe, most of them should be available at your local supermarket however you may need to make a trip to your local South Asian grocer to find: Sev which is a traditional Indian snack made of fried gram-flour, Tamarind Chutney and Papdi which is the base of this dish!

Papdi Chaat Recipe

Green Chutney

  • Handful of coriander 
  • 10-12 mint leaves 
  • 3 Green Chillis
  • 1 inch ginger 
  • 2 garlic cloves 
  • Juice of half a lemon 
  • 1 tsp of salt 
  • 1-2 tbsp of water
  • 2 large handfuls of papdi or enough to cover the base of your bowl
  • ¼ can of chickpeas
  • 1 medium sized potatoes
  • 2 small tomatoes 
  • 1 small red onion 
  • 6-7 tablespoons of greek yoghurt
  • 2-3 tablespoons of water
  • Tamarind Chutney
  • 2 tablespoons of chaat masala
  • 2 tablespoons of sev
  • 2 tablespoons of pomegranate seeds

Method Of Papdi Chaat Recipe

  1. Begin by boiling your potato in water until cooked all the way through, this will take 10-12 minutes. To check if its cooked, prick the centre with a knife and it should just glide in if it feels firm it needs a little longer. Once cooked, remove and allow to cool before peeling off the skin and chopping into equal sized cubes.
  2. For the Green Chutney throw all of the ingredients into a hand blender and whizz away until you get a beautifully silky chutney. Make sure to taste and adjust the seasoning, it may need more salt or lemon juice depending on your taste!
  3. Prep the vegetables: de-seed and dice the tomatoes and red onion finely. Drain the chickpeas and give them a rinse.
  4. Place the greek yoghurt into a bowl and add 2-3 tablespoons of water, whisk until it becomes pouring consistency and set aside.
  5. If you’re going to make your own papdi then do this ahead of time and allow them to cool. Refer to my blog post to see how to make your own!

Time to compile the Chaat!

  1. Place your papdi at the bottom of your bowl then layer on your potatoes, chickpeas, tomatoes and red onion.
  2. Spoon on your yoghurt and green chutney.
  3. Drizzle on your tamarind chutney
  4. Sprinkle on the chaat masala, sev and pomegranate seeds.
  5. Enjoy straight away to prevent the papdi from becoming soggy.

Making your own Papdi

You can use shop bought or homemade papdi, I decided to make my own because I was feeling fancy and honestly the result is FAR BETTER!

For the dough you’ll need to combine:

  • 90g papdi 
  • 1 teaspoon of semolina 
  • 1 tablespoon of cooking oil
  • 1/2 teaspoon salt 
  • 2 tablespoons of lukewarm water 

The aim is a soft but firm dough, make sure to add the water 1 tablespoon at a time to ensure you end up with the correct texture. Roll out the dough with a rolling pin and cut into rough squares as I’ve shown above and deep fry until lightly brown. Do not overcook them, they only need a minute on each side!
