Ingredients for Masala Chips
Serves 3-4
- chips (roughly 4 handfuls)
- 4 cloves of chopped garlic
- Half of a red, yellow + green pepper cut length ways
- 1 whole onion cut length ways
- 2 tbsp ketchup
- 2 tbsp garlic chilli sauce it has to be the Maggi one, this is non-negotiable, find it at your local south-asian store.
- 1 tbsp tamarind sauce
- Half a bunch of spring onions chopped
- 2 red chilies (adjust Ito more of less depending on your spice tolerance)
- 1 tsp lemon juice
- Handful of chopped coriander (save half to garnish with)
Method
- Fry your garlic in rapeseed oil on a med-low heat, for about 2 mins. Keep stirring to ensure you don’t burn the garlic!
- Add your peppers and onion and continue to fry on a medium heat for 3-4 mins, stirring throughout.
This is when you should start air-frying your chips! - Add in all your sauces, spring onion and red chilli. You can go in with a splash of water if your sauce is too thick. Lower the heat to a simmer and then add your lemon juice and stir.
- Add your chips, coriander and green part of spring onion and then stir gently with a fork, being careful not to break the chips.
- Serve immediately and garnish with he rest of your coriander!
