Let’s talk Cocoa powder For Bakers Chocolate Brownie
My recipe calls for cocoa powder as opposed to melted chocolate and that’s probably left you feeling a little bit confused. I too used to use melted chocolate in my brownies until one day I ran out and was desperately craving brownies and so resorted to using cocoa powder instead. The end result: Bakers Chocolate Brownie Recipe. Since then I’ve never gone back! Now I don’t know the science behind it but I promise you, cocoa powder does a much better job of producing a fudgy and chocolatey brownie. I do add in chocolate chunks but that’s just because I love getting pockets of extra sweetness, you don’t necessarily have to though!
For the best chocolate brownies, you’ve gotta use some good quality cocoa powder, my favourite has to be either Greens & Black’s Cocoa powder or Menier Cocoa powder.
Baking
These brownies need to be baked for 25-35 minutes max. Do not overcook them unless you prefer a cakey brownie. I see a lot of people testing their bakes with a toothpick or wooden skewer and that works great for cakes but not brownies, the skewer will not come out clean, if it does it means its overbaked.
After your brownies have baked, try and be patient and allow them to completely cool before slicing. This will give you a cleaner slice and the longer you wait the longer the brownies have to develop in flavour.
TIP: Remember that the dish you bake your brownies in is going to be piping hot so even when you remove your brownies from the oven, they will continue to cook!

Best Brownie Recipe
Ingredients
- 4 large eggs
- 240 g unsalted melted butter
- 30 ml vegetable
- 1 vanilla pod
- 400 g brown sugar
- 130 g plain flour
- 100 g cocoa powder
- 250 g chopped chocolate
- 1/2 tsp salt
Instructions
- Preheat oven to 160°.
- Grease a 10×10 inch dish and line with parchment paper.
- Combine the eggs, melted butter, sugar and vanilla in a large bowl. Then whisk until light in colour.
- Sift in the flour, cocoa powder and salt and gently fold them together until combined. Make sure you don't over-mix the batter!
- Fold in three quarters of the chocolate chunks until evenly distributed.
- Pour the mixture into your lined dish and smooth with a flat spatula. Add your remaining chocolate chunks.
- Place in the oven and bake for 25-35 minutes. Once baked, allow the brownies to cool, then remove from the dish.
- Allow the brownies to cool completely and then cut them into 16 evenly sized pieces and enjoy!
