It’s finally BBQ season in the UK so let’s get grilling and make these Best BBQ Chicken Skewers! They’re tender, juicy and oh so flavourful. This is definitely a recipe that you guys need to try!
If you don’t own an actual barbecue then get your hands on an instant barbecue, however this recipe would also work well in an air fryer or oven.
Spice blend
For my spice blend I went with a variety of household spices, most of which you should already have at home if you’re an avid chef and love you seasoning. I used the following spices: onion powder, garlic powder, chilli powder, paprika, turmeric, harissa powder, coriander powder, cumin powder and then finally some salt and pepper! The quantity of each is crucial to getting the prefect balance of spice.
- 1 tablespoon onion powder
- 2 tablespoon garlic powder
- 1/2 teaspoon chilli powder
- 1/2 teaspoon paprika
- 1 teaspoon turmeric
- 1 tablespoon harissa powder
- 1/2 tablespoon cumin powder
- 1/2 tablespoon coriander powder
Method By BBQ Chicken Tips
- Begin by cutting your chicken thighs into equal sized pieces and place into a large mixing bowl
- Add your dry spices, herbs, garlic, chilli and butter to your chicken. Mix well and then clingfilm the bowl and place in the fridge. Allow the chicken to marinate for 4 hours.
- Load your chicken onto your skewers, making sure to thread the same number of chicken pieces on each skewer
- Place on a hot barbecue to cook, turning regularly so that they cook evenly. Occasionally brush each side with some olive oil.
- I served my chicken skewers straight off of the grill in a wrap with some homemade tzatziki, a turkish pepper that I also popped on the barbeque and a side salad!
Tips
- Use chicken thighs rather than breasts, the resulting kebabs will be far more tender as chicken breast can be very easily overcooked!
- Allow your chicken thighs to marinate for at least 4 hours if not overnight
- Metal skewers are best! However if you don’t own any, make sure you soak your wooden ones in water prior to putting on the grill, this will prevent the ends from burning

- 1 tbsp onion powder
- 2 tbsp garlic powder
- ½ tsp chilli powder

- handful of parsley finely chopped
- handful of coriander finely chopped
- 7 garlic cloves crushed or minced
- 2 red chillis finely chopped
