- Half a punnet of plum tomatoes sliced in half lengthways
- 1 red onion sliced
- Handful of kalamata olives
- Juice of 1 lemon
- 1 teaspoon salt
- 1 teaspoon black pepper
- Feta crumbled to taste

- Slice 3/4 of a cucumber into thin rounds or half-moons, depending on your preference.
- Halve the plum tomatoes lengthways.
- Slice the red onion thinly to balance its flavour.
- In a large bowl, toss the sliced cucumber, halved tomatoes, red onion, and a handful of Kalamata olives.
- Drizzle the juice of one lemon over the vegetables. Sprinkle with 1 teaspoon of salt and 1 teaspoon of black pepper. Toss gently to coat everything evenly.
