Starting my morning (or afternoon!) with a Egg Bun Masala is my ultimate dream breakfast or brunch meal and so I knew I just had to get this recipe up for you all. Inside a buttery toasted brioche bun you’ll find my perfectly seasoned masala omelette with a thick slice of melted red leicester cheese. Sounds like heaven right?
Ingredients For Egg Bun Masala
This recipe calls for the following ingredients
- eggs
- green chilli finely chopped, optional
- small tomato finely chopped
- red onion finely chopped
- handful of coriander finely chopped
- turmeric
- salt
- black pepper
- oriander powder
- red leicester cheese with jalapeño
- brioche bun
- oil (any will do, I used rapeseed)
- ketchup
Now when I mean a small onion I mean small! The onion I used was a Indian baby red onion, pictured above, which I find are super sweet and the perfect size. The chilli is optional so if you can’t handle spice feel free to omit it. I went for Tesco’s version of Mexicana’s cheese slices sadly I can’t find them on their website but look out for them in store! Alternatively, you can use plain red leicester cheese if you don’t like the spicy jalapeño kick of this cheese.
Now don’t worry if you don’t have all of these ingredients at home, the only ingredients that are essential are the ones for the masala omelette. The brioche burger bun can easily be substituted for regular bread or a regular burger bun and the cheese switched to whatever type you like most!
Instructions
- Start by whisking 2 eggs in a bowl. Then add your finely chopped chilli, tomato, onion and coriander, salt, pepper, coriander powder and turmeric and mix well.
- Add the oil to a frying pan and heat for 2 minutes, once hot pour your omelette mixture into the pan. Allow to cook on a medium-low heat for 3-4 minutes on each side and then fold your omelette in half and half again. Place your slice of Red Leicester cheese on top of the folded omelette and put a lid on your pan and allow the cheese to melt, turn the heat down to the lowest setting whilst doing this.
- Toast your brioche bun in a pan or in the toaster. Spread some ketchup on the bottom, add your masala omelette and finish with the top half of the bun and enjoy!
