Vibrant Pico de Gallo is probably my all time favourite dip (guacamole look away now.) It’s just so versatile and is used across so many different dishes that I love: fajitas, tacos, enchiladas, burritos- god the list could go on and on! Today we’ll be enjoying it as a dip with some tortilla crisps.
It’s vibrant, fresh and so so simple to make. All you’ll need are 5 ingredients: tomatoes, white onion, jalapeño, coriander and lime (plus salt!) which you probably already have in your fridge at home or can be easily be found at your local supermarket. So I don’t want to see any of you buying a pre-prepared version at the supermarket. It’s honestly 10x better when homemade, trust me on this one.
Now if you’re anything like me, you love a gimmick and kitchen gadgets are just my favourite to collect. However the one that I refused to buy into was a lemon or lime squeezer because ‘I can just do it by hand, it’s silly’ well I recently purchased one and oh my god, my life has changed. It’s just incredible, I will not bore you with the details of how perfectly it extracts the juice from the lime. If I have managed to convince you, here is the lime squeezer that I use. I bought it because it was on offer and that discount was all I needed to see in my moment of weakness but I have zero regrets.
Vibrant Pico de Gallo TIPS:
- Fresh is best! The fresher the ingredients, the better your Pico de Gallo will taste!
- Wash your ingredients well, especially when using produce that isn’t organic.
- Make your Pico de Gallo 30 minutes ahead of you enjoying it, this is so that it has enough time for the flavours to marinate and develop, resulting in the tastiest Pico de Gallo ever.
- Tomatoes are full of moisture and so will release quite a bit of water, this is normal don’t worry! Just make you serve your Pico de Gallo with a slotted spoon to avoid making whatever it is you’re eating soggy. If using as a dip for tortillas, crack on as normal and get dipping OR using a slotted spoon, spoon your Pico de Gallo onto each tortilla crisp if you’re feeling fancy.

Pico de Gallo
Ingredients
- 1 small white onion
- 4 medium red tomatoes
- 1 jalapeño
- coriander half a handful
- 1 lime
- salt to taste
Instructions
- Finely dice your tomatoes, onions and jalapeño and place them in your bowl. Ensure that they are all similar in size!
- Finely chop your coriander and then add this into your bowl next.
- Add in the juice from one lime and season the Pico de Gallo with salt ( be generous!)
- Stir and allow to sit for 30 minutes before tucking in!
