Baking these Sea Salt Brownies
These brownies need to be baked for 25-35 minutes max. Do not overcook them unless you prefer a cakey brownie. I see a lot of people testing their bakes with a toothpick or wooden skewer and that works great for cakes but not brownies, the skewer will not come out clean, if it does it means its overbaked.
After your brownies have baked, try and be patient and allow them to completely cool before slicing. This will give you a cleaner slice and the longer you wait the longer the brownies have to develop in flavour.
TIP: Remember that the dish you bake your brownies in is going to be piping hot so even when you remove your brownies from the oven, they will continue to cook!
Ingredients
- 250g unsalted butter
- 150g milk chocolate
- 150g dark chocolate
- 170g White sugar
- 170g Brown sugar
- 4 eggs
- 1 teaspoon of vanilla extract
- pinch of sea salt
- 50g cocoa powder
- 150g plain flour
Ganache
- 150 milk chocolate
- 300ml double cream
Method
- Begin by melting the butter and chocolate in 30 second intervals in the microwave
- Transfer to a large mixing bowl and whisk in the brown and white sugar
- Once combined, crack in the 4 eggs, add the vanilla extract and a pinch of sea salt
- Whisk until combined and sift in the cocoa powder and plain flour. Fold the dry ingredients in with a spatula and transfer to a tin lined with baking paper.
- Bake for 25-35 minutes depending on how fudgey you like them! The longer you bake them for the more cakey they will become. Remember that the brownies will continue to cook once removed from the oven!
- Whilst the brownies are cooling melt 150g chocolate and 300ml in the microwave in 30 second intervals, stirring in between, this is our ganache done!
- Once the brownies have cooled (approximately 1 hour) pour on the ganache, top some more sea salt and put in the fridge to set for 2 hours.
- Once set, slice into 9 squares and enjoy!
