I did it guys, I jumped on the spicy fried egg tiktok trend. And honestly, I wish I’d done it sooner. Chilli oil on anything and everything, always.
I decided to jazz it up a little and spread Boursin’s garlic and herb spread over my toast. Now I was feeling fancy and so opted for sourdough but a regular loaf of bread would do just fine! On top of the Boursin I layered up perfectly sliced avocado and then topped it with my spicy egg.
Now let’s talk the star of the show…the spicy fried egg! Instead of frying your egg in regular oil, this trend has you fry the egg in chilli oil. Mind blown. I can’t believe someone hadn’t thought of this sooner! The chilli oil I used was the Lee Kum Kee Chiu Chow Chilli Oil but you could use any one you like.
TIPS
- Make sure you pan is on a medium heat and not too hot, if it is then the chilli flakes in the chill oil will burn around your fried egg.
- Spoon the chilli oil oil from the pan on top of your fried egg!
- Pop the lid on as soon as you crack the egg into the pan so that the top cooks perfectly.
The cook time will vary depending on how you like your yolk cooked, I like my yolk to be ‘jammy’ still a little runny but not TOO runny, does that make any sense? I just find a runny yolk a little messy! For a jammy yolk, fry your egg for 3-4 minutes. For a runny yolk 2-2½ minutes.

Spicy Fried Egg
Ingredients
- 1 egg
- 1 slice of sourdough
- tbsp extra virgin olive oil
- 1 tbsp chilli oil
- ½ avocado sliced
- 1 tbsp Boursin garlic and herb cheese
Instructions
- Begin by peeling your avocado and then slicing it lengthways. Set aside for later.
- Using a pastry brush (or just your fingers if you don't have one) rub the olive oil into both sides of your sourdough toast and toast on a medium heat for about 2-3 minutes on each side or until golden brown.
- Whilst your bread is toasting, pre heat a frying pan for 2 minutes on a medium-low heat. Add your chilli oil and crack in the egg. Pop the lid on straight away and cook for 2-2½ minutes for a runny yolk or 3-4 minutes for a jammy yolk. Remove the lid then spoon the remaining chilli oil in the pan over the fried egg.
- Remove your bread from the heat. Spread on the Boursin cheese, top with your avocado slices and fried egg.
- Enjoy!
