My Spicy Noodle Dumpling Soup is so comforting, and perfect for the chilly weather we’re having. Plus it only takes 20 minutes to make which makes it taste all that much better!
Ingredients:
For the Soup Base:
- 2 tbsp sesame seed oil
- 2 tbsp Thai red curry paste
- 1 tsp turmeric
- 1 tsp paprika (optional, for extra spice)
- 1 tsp brown sugar
- Salt, to taste
- 1 tin (400ml) coconut milk
- 300ml boiling water
- Stalks from a small bunch of fresh coriander, chopped
For the Noodles and Dumplings:
- 2 nests of noodles (your choice: egg, rice, or wheat noodles)
- 10 frozen vegetable dumplings, defrosted
- 2 heads of pak choi, peel each leaf off
For Garnish:
- Fresh coriander, chopped
- Soy sauce, to drizzle
- Juice of ½ lime
Method:
- Prepare the Broth:
- Heat the sesame seed oil in a large pot over medium heat for 1 minute.
- Add the Thai red curry paste and stir for about 1 minute until fragrant.
- Sprinkle in the turmeric, paprika (if using), brown sugar, and salt. Toss in the chopped coriander stalks. Cook for 1 minute, letting the spices develop in flavour.
- Stir in the coconut milk and boiling water. Mix well and bring the soup to a gentle simmer. Allow it to cook for about 7 minutes, stirring occasionally.
- Cook the Noodles and Dumplings:
- While the soup is simmering, cook the noodles according to the package instructions.
- One minute before the noodles are done, add the pak choi and defrosted vegetable dumplings to the boiling water. Let them heat through with the noodles.
- Drain and set aside.
- Assemble the Dish:
- Divide the noodles and dumplings between serving bowls.
- Pour the hot, flavorful broth over the noodles and dumplings.
- Garnish with fresh coriander, a drizzle of soy sauce, and a squeeze of lime juice.
