I’m finally back with another recipe, and this one features one of my guilty pleasures. I love potatoes in absolutely any form that you could possibly imagine. So, when you combine my love of spices and potatoes, you get the fab Spicy Potato Wedges Recipe. What’s even better is that these are BAKED and not fried, which kind of takes the guilt away, right?
They’re crisp, fluffy inside and so so flavourful!
The best thing about this recipe is the fact that you can really add whichever spices you fancy so go wild! The only non-negotiable is the cayenne pepper, that’s what really gives these wedges a kick.
POTATO WEDGES RECIPE TIPS:
- Use large chunky potatoes to get those real thick wedges!
- Buy your potatoes loose, the ones pre packaged are usually all different sizes which isn’t ideal.
- Any potatoes will work really but I opted for red ones because they’re just so pretty!
- Be careful to not over boil your potatoes, you want to get them to the point where they are just fork tender.
- Ensure your wedges are cut to more or less the same time, as otherwise they’ll not all cook at the same time.

Spicy potato wedges
Ingredients
- 1 kg red potatoes
- 4 tbsp rapeseed oil
- 1 tsp cayenne pepper
- 1 tsp smoked paprika
- 1 tsp onion powder
- 2 tsp garlic powder
- 1 tsp black pepper
- salt to taste
Instructions
- Pre-heat your oven to 200°/390F
- Wash your potatoes thoroughly in cold water and then pat dry. Slice your potatoes into wedges by slicing them in half, and then each half into three. This gives you 6 wedges per potato.
- Transfer them to a pot with boiling water and boil for 5 minutes on a medium heat.
- In a bowl combine your spices with the rapeseed oil.
- Drain the potatoes and transfer them to 2 baking trays lined with parchment paper and make sure that wedges are well spaced.
- Spoon your spicy oil onto the wedges and using your fingers rub make sure that the entire surface of each wedge is coated.
- Bake the wedges for 25-35 minutes, flip them once halfway through. The cooking time may vary depending on the size of your wedges, so keep a close eye on them!
- Remove from the oven and enjoy!
