Traditionally these Cheese and Spinach rolls are known as ‘Rakakat Jibneh‘ and are a staple in Lebanese cuisine. My recipe utilises a special Middle Eastern cheese…Akawi Cheese. You can find it in most Middle Eastern supermarkets and it has a great tang to it! I like to mix my Akawi cheese with some Mozzarella for the ultimate cheese pull. If you struggle to find any Akawi cheese where you are then halloumi will also work.

TIP For Spinach Rolls
Make sure you desalinate your Akawi cheese because otherwise the rolls might turn out too salty. To desalinate your cheese, drain it form the brine that it comes in and soak in cold water or milk for 1 hour. Pat dry before using and you’re good to go.

- Filo Pastry
- 200g Akawi cheese, grated
- 200g Mozzarella, grated
- Handful of finely chopped mint
- Handful of finely chopped parsley
- 1 tsp black pepper
- Oil for frying

- 200 g Akawi cheese
- 200 g Mozzarella
- Handful of Mint finely chopped
- Handful of Parsley finely chopped
- 1 tsp Black pepper
- Oil for deep frying
Instructions
- Begin by combining all the ingredients for the filling in a bowl and stir well!
- Take one sheet of filo pastry and place one tablespoon of the filling at the beginning of the sheet, refer to my video for the exact instructions on how to fold your spring roll.
- Ensure that you wet the end and seal the spring rolls tightly.
- Deep fry for 5-6 minutes on a medium heat or until golden brown
- Drain on some kitchen towels and allow to cool for 3 minutes and then enjoy!
