I love all kinds of bread and my Turkish Cheese Pide has to be one of the best kinds! It’s cheesy, fluffy and oh so yummy.

Ingredients for my Turkish Cheese Pide
The dough for this recipe is extremely straightforward as most of the heavy lifting is done by a stand mixer. If you don’t have then you can make it by hand but it will take you a little longer. My recipe makes 2 pide’s so feel free to half or double the recipe depending on how much many people you’re cooking for!
- 300g warm milk
- 30g melted butter
- 2 teaspoons of yeast
- teaspoon of salt
- 180g flour
- 500g ricotta cheese
- 250g mozzarella
- salt to taste
- 1 teaspoon of black pepper
- 2 teaspoons of black sesame seeds
Method for the dough
- Begin by warming 300ml of milk in the microwave for 30 seconds. Then add your melted butter and 2 teaspoons of yeast. Give that a whisk and set aside whilst we work on our dry ingredients!
- To your stand mixer bowl add 180g of flour, 1 teaspoon of salt and the yeast mixture. Set that to mix for 10 minutes! You’ll be tempted to add more flour but have patience and the dough will come together.
- Once slightly sticky but coing away from the sides of the bowl, add the dough into a bowl greased wiht some olive oil. Cover with a tea towel and put in a warm place to rise. I heat my oven to 30 degrees and then turn it off and place my bowl in there.
- Whilst the dough is rising combine 500g of ricotta cheese with 200g of grated mozzarella, salt to taste and 1 teaspoon of black pepper. Mix well and place in the fridge.
- Once doubled in size, remove the dough from the bowl and split into two equal sized balls. Place each ball of dough on a baking tray lined with parchment paper and stretch with your hands until you get an oval shaped pide.
- Place half the cheese mixture onto each pide, leaving half a cm around the edge. Twist sides of the dough going all the way around to form a crust. Top the cheese mixture with some extra mozzarella and sprinkle on some black sesame seeds.
- Bake in the oven for 55 minutes at 160 degrees celcius until golden brown
- Then enjoy!
