If you’re looking for a hearty, savoury, and utterly delicious way to start your day, this veggie breakfast bagel is for you! It’s got creamy Boursin cheese, avocado, crispy hash browns, fresh spinach, cheddar cheese, and a fried egg. I don’t think you could possibly add any more to it as it’s absolutely stuffed to the brim! And my sisters go to breakfast request from me. Ingredients for Veggie breakfast bagel
- 1 bagel (your choice, plain, sesame, or everything bagel, I used a sesame bagel)
- 1–2 tsp extra virgin olive oil (for toasting)
- 1 tbsp Boursin cheese
- 1/2 ripe avocado
- Sea Salt, pepper, cayenne pepper, and lemon juice (for seasoning avocado)
- Handful of baby spinach leaves
- 2 hash browns
- 1 slice of cheddar cheese
- 1 large egg
Instructions on how to make Veggie breakfast bagel
- Cook the Hash Browns:
- In a skillet, cook the hash browns according to the package instructions until golden and crispy.
- Prepare the Bagel:
- Slice the bagel in half. Brush each half lightly with extra virgin olive oil.
- Toast the bagel halves in a skillet over medium heat until golden and crispy, then set aside.
- Prepare the Egg:
- Separate the egg white from the yolk, keeping the yolk intact.
- In the same skillet, heat a little more olive oil over medium-low heat.
- Pour in the egg white, letting it cook for a few moments until it starts to set. Flip and then carefully place the bagel lid (the top half of the bagel) directly on top of the egg white in the skillet.
- Gently place the egg yolk in the center of the egg white, on top of the bagel lid.
- Cover the skillet with a lid and steam for 5 minutes, until the yolk is warm but still runny.
- Assemble the Bagel:
- Spread Boursin cheese on the bottom half of the toasted bagel.
- Layer the avocado on top of the Boursin. Your avocado should be ripe so spoon it straight out from the avocado skin onto the bagel. Season with sea salt, pepper, a squeeze of lemon juice, and a dash of cayenne pepper. Mash with a fork to combine and spread it out evenly.
- Add a handful of baby spinach leaves on top of the avocado.
- Place the hash browns and cheddar cheese on top of the spinach.
- Carefully lift the egg and bagel lid from the skillet and place it over the hash browns.
- Serve:
- Cut in half if desired, and enjoy your ultimate breakfast bagel!
