Here is the recipe for my best veggie sandwich and honestly I think it is THE ultimate sandwich. I’m a little biased for sure, but trust me on this one. Look at the colours! They’re just beautiful.
You could really use whatever vegetables you have in your kitchen in this best veggie sandwich, but I went for a mediterranean vibe. The key to this sandwich is using a super crusty loaf of sourdough bread. I bought mine from M&S but you could find it in any super market.
On one half of the sourdough spread some basil pesto (homemade is best!), luckily I’ve got a recipe for my homemade basil pesto so make sure you check it out before giving this a go! On the other half spread some sun-dried tomato pesto. Next layer up with your veggies. I went for griddled aubergine, fresh spinach leaves, griddled courgettes, roasted red peppers and finally a generous layer of buffalo mozzarella. Don’t forget to season with salt and pepper and that’s it!

Veggie Sandwich
Ingredients
- 3 tbsp basil pesto
- 3 tbsp sun-dried tomato pesto
- ¼ courgette sliced
- 5-6 spinach leaves
- 3 chargrilled peppers in oil
- 1 buffalo mozzarella ball
- ½ small aubergine sliced
Instructions
- Begin by frying off your aubergines and courgettes on a griddle pan, on a medium heat for 4 minutes on each side.
- Slice your sourdough bread through the middle and spread each pesto on either side of the bread.
- Layer on your aubergine, spinach leaves, courgettes, chargrilled peppers and top with your buffalo mozzarella. Season with salt and pepper and firmly press the other half of the bread on top!
