These Mango Pancakes have been all over the internet so I knew I had to give them a go! Turns out they are so easy to make and take minimal time to whip up, so make sure you give these a go. Just look at the cross section!
Since mangoes are now in season there are a HUGE variety of mangoes to choose from. Alphonso mangoes are, in my opinion, the sweetest and most delicious variety of mangoes. You can find them in your local South Asian grocer.
Tips For Mango Pancakes
- Sieve the entire mixture to get rid of any flour pockets your batter may have
- Place the batter in the fridge to chill, this allows the flour to absorb the liquid and makes your batter even tastier!
- Make sure you use a non-stick pan when cooking your crepes
- For extra sweetness, add some sugar before whipping your cream
Method
- In a medium sized bowl, whisk together the eggs, sugar, vanilla and yellow food colouring.
- Sieve the batter and put in the fridge to chill for 30 minutes.
- Whilst your batter is chilling, whip up your double cream with a tablespoon of sugar, be careful not to overwork your cream because it will split.
- Heat up a non-stick pan on a medium heat and lightly grease with butter. Then depending on the size of your pan, pour about 2-3 tbsp of your batter and swirl it around to evenly coat the bottom of the pan.
- Cook only one side of your crepe for 45 seconds, then take it off the heat and allow to cool.
- Place a mango slice onto the middle of your crepe and using a piping bag pipe some double cream onto your mango slice. Fold your crepes as per my video and chill in the fridge for 30 minutes then slice and enjoy!

Delicious Hong Kong style crepes!

- 1/2 tsp vanilla
