Begin by chopping all of the cherry tomatoes and add them into a bowl, to make your dish really pop with colour I recommend using different coloured ones
Following this, roughly chop up the basil leaves and add them to the cherry tomatoes
Season the mixture with salt and spoon in the extra virgin olive oil, stir well
Take the four slices of sourdough bread and toast them in a pan with some extra virgin olive oil
After toasting them to your satisfaction, rub each slice with a clove of garlic
Quarter the buratta and spread each quarter on each slice of toast
Top each piece with a quarter of the cherry tomato mixture
Savour and enjoy!
