Begin by cutting your chicken thighs into equal sized pieces and place into a large mixing bowl
Add your dry spices, herbs, garlic, chilli and butter to your chicken. Mix well and then clingfilm the bowl and place in the fridge. Allow the chicken to marinate for 4 hours.
Load your chicken onto your skewers, making sure to thread the same number of chicken pieces on each skewer
Place on a hot barbecue to cook, turning regularly so that they cook evenly. Occasionally brush each side with some olive oil.
I served my chicken skewers straight off of the grill in a wrap with some homemade tzatziki, a turkish pepper that I also popped on the barbeque and a side salad!
