This Blueberry and Lemon French Toast recipe is a super easy breakfast treat. The dish is topped with fresh blueberries and garnished with icing sugar and a sprinkle of lemon zest for an elegant finish. Ideal for brunch or a weekend indulgence!
Using a bread knife cut your bread into thick slices. Brioche bread is best however thick white bread would work too.
Prepare the french toast batter
In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
Cook the french toast:
Preheat a large skillet over medium heat and melt the butter.
Dip each slice of bread into the egg mixture, ensuring both sides are well coated but not soaked.
Place the coated bread slices onto the skillet and cook until golden brown on each side, about 3-4 minutes per side.
Assemble the french toast
Transfer the cooked French toast slices to serving plates.
Dust with some icing sugar, drizzle on as much or a slittle honey as you like, scatter on your washed raspberries and top with a dollop of clotted cream.
Serve and enjoy
