Blueberry and Lemon French Toast

This Blueberry and Lemon French Toast recipe is a super easy breakfast treat. The dish is topped with fresh blueberries and garnished with icing sugar and a sprinkle of lemon zest for an elegant finish. Ideal for brunch or a weekend indulgence!

Ingredients

  • brioche bread or challah bread
  • 2 large eggs
  • 50 ml milk
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 tbsp butter for frying

For the topping

  • fresh blueberries
  • 1 lemon zest
  • honey to taste
  • 2 spoonfuls of clotted cream
  • 1 tbsp icing sugar

Instructions

Begin by slicing the bread

  • Using a bread knife cut your bread into thick slices. Brioche bread is best however thick white bread would work too.

Prepare the french toast batter

  • In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.

Cook the french toast:

  • Preheat a large skillet over medium heat and melt the butter.
  • Dip each slice of bread into the egg mixture, ensuring both sides are well coated but not soaked.
  • Place the coated bread slices onto the skillet and cook until golden brown on each side, about 3-4 minutes per side.

Assemble the french toast

  • Transfer the cooked French toast slices to serving plates.
  • Dust with some icing sugar, drizzle on as much or a slittle honey as you like, scatter on your washed raspberries and top with a dollop of clotted cream.

Serve and enjoy

  • Serve immediately while warm.

  • -Bread Selection: Brioche is the top choice, but any thick-cut bread can work well.
    -Clotted Cream Alternative: If clotted cream isn’t available, try using mascarpone or thick whipped cream instead.
    -Enhancements: Add a splash of almond extract to the batter for extra flavour, or sprinkle sliced almonds on top for a delightful crunch.
