Using a serrated knife, slice your baguette into 1 ½ inch pieces, coat with olive oil and toast on a pan until golden brown. Set them aside once done.
Slice your cherry tomatoes and add them into a bowl.
Grate in your two garlic cloves, reserving some of the garlic to rub on the toasted bread later.
Chop your basil roughly and add to your tomato and garlic mixture. Along with the extra virgin olive oil. Season with salt and pepper, stir well.
Rub the reminder of the garlic cloves on your sliced baguette and top them with your tomato mixture. Now all that's left to do is enjoy your bruschetta!
