Cheese and Spinach rolls

Ingredients

  • Filo Pastry
  • 200 g Akawi cheese
  • 200 g Mozzarella
  • Handful of Mint finely chopped
  • Handful of Parsley finely chopped
  • 1 tsp Black pepper
  • Oil for deep frying

Instructions

  • Begin by combining all the ingredients for the filling in a bowl and stir well!
  • Take one sheet of filo pastry and place one tablespoon of the filling at the beginning of the sheet, refer to my video for the exact instructions on how to fold your spring roll.
  • Ensure that you wet the end and seal the spring rolls tightly.
  • Deep fry for 5-6 minutes on a medium heat or until golden brown
  • Drain on some kitchen towels and allow to cool for 3 minutes and then enjoy!
