Ingredients

  • ¾ Cucumber sliced
  • ½ Punnet of Plum Tomatoes sliced In half, lengthways
  • 1 Red Onion sliced
  • Handful Kalamata Olives
  • 1 Juice of lemon
  • 1 tsp salt
  • 1 tsp black pepper
  • tsp Oregano
  • Feta Crumbled to Taste

Instructions

  • Prepare the Vegetables:
    Slice 3/4 of a cucumber into thin rounds or half-moons, depending on your preference.Halve the plum tomatoes lengthways. Slice the red onion thinly to balance its flavour.
  • Combine the Base Ingredients: In a large bowl, toss the sliced cucumber, halved tomatoes, red onion, and a handful of Kalamata olives.
  • Season the Salad: Drizzle the juice of one lemon over the vegetables. Sprinkle with 1 teaspoon of salt and 1 teaspoon of black pepper. Toss gently to coat everything evenly.
  • Add the Feta: Crumble feta cheese over the salad to your taste. Adjust the amount depending on how much you enjoy feta's tangy flavor.
  • Mix and Serve: Lightly toss the salad again to distribute the feta and seasoning. Serve immediately as a side dish or light meal.
