Begin by greasing your air-fryer basket with some room temperature butter and then line it with a circular piece of parchment paper
For the dough: cream together butter and sugar with an electric whisk
Add in the flour, egg yolk, salt, bicarbonate of soda and mango pulp. Give the cookie dough batter a good stir
Next add in the white chocolate chunks and stir until they are fully incorporated into the batterTransfer your cookie dough batter into the lined air-fryer basket
Bake at 150° for 20-30 minutes
Allow to cool for 5 minutes before decorating with mango pulp, melted white chocolate and mango chunks.
