Mango and White Chocolate Cookie Dough

Mango season is underway so lets make my Mango and White Chocolate cookie dough...in the Air Fryer!

Ingredients

  • 100 g room temperature butter
  • ½ tsp vanilla extract
  • 70 g light brown sugar
  • 70 g caster sugar
  • 100 g flour
  • ¼ tsp bicarbonate of soda
  • ½ tsp salt
  • 200 ml mango pulp 100ml for inside the batter and 100ml for decorating
  • 150 g white chocolate 100g for inside the batter and 50ml for decorating
  • 1 mango cubed

Instructions

  • Begin by greasing your air-fryer basket with some room temperature butter and then line it with a circular piece of parchment paper
  • For the dough: cream together butter and sugar with an electric whisk 
  • Add in the flour, egg yolk, salt, bicarbonate of soda and mango pulp. Give the cookie dough batter a good stir
  • Next add in the white chocolate chunks and stir until they are fully incorporated into the batterTransfer your cookie dough batter into the lined air-fryer basket 
  • Bake at 150° for 20-30 minutes 
  • Allow to cool for 5 minutes before decorating with mango pulp, melted white chocolate and mango chunks.
