Fry your garlic in rapeseed oil on a med-low heat, for about 2 mins. Keep stirring to ensure you don’t burn the garlic!
Add your peppers and onion and continue to fry on a medium heat for 3-4 mins, stirring throughout.
This is when you should start air-frying your chips!
Add in all your sauces, spring onion and red chilli. You can go in with a splash of water if your sauce is too thick. Lower the heat to a simmer and then add your lemon juice and stir.
Add your chips, coriander and green part of spring onion and then stir gently with a fork, being careful not to break the chips.
Serve immediately and garnish with he rest of your coriander!
