Parcel Cod

This Parcel Cod recipe has to be one of my favourites yet, it's fun and super delicious to make for your dinner. The fish is tender and flakey and served in a parchment paper parcel that is great for making your dinner that little bit more exciting. This recipe is the first of my Dinner Dilemma's series, each week I'll be sharing a new recipe idea for you to use, that way you're never stuck for what to make again!

Ingredients

  • 2 cod loins
  • 4 teaspoons paprika
  • 2 teaspoons salt
  • 2 teaspoons of black pepper
  • handful of coriander
  • 6 garlic cloves
  • juice of 1 lemon
  • drizzle of olive oil
  • 50 g butter
  • 8 cherry tomatoes
  • 1 pack of asparagus

Instructions

  • Make your parchment paper parcels by following the instructions above.
  • Preheat the oven to 180℃
  • Begin by removing your cod loins from the packaging and patting them dry with a paper towel. Transfer the fish to a chopping board and season each side with paprika, salt and pepper. Make sure to rub the seasoning into fish and ensure each side is coated. Place the fish into the parchment parcels.
  • Add the washed asparagus and cherry tomatoes to the parcels.
  • Finely chop the garlic and coriander and scatter over the fish and veg.
  • Drizzle about a tablespoon of oil and the juice of half a lemon over each fish loin.
  • Place the fish into the oven to bake for 20 minutes.
  • I served my fish with a side of roast potatoes which I've also got a recipe for!
  • Serve fresh out of the oven and enjoy!
