Begin by melting the butter and chocolate in 30 second intervals in the microwave
Transfer to a large mixing bowl and whisk in the brown and white sugar
Once combined, crack in the 4 eggs, add the vanilla extract and a pinch of sea salt
Whisk until combined and sift in the cocoa powder and plain flour. Fold the dry ingredients in with a spatula and transfer to a tin lined with baking paper.
Bake for 25-35 minutes depending on how fudgey you like them! The longer you bake them for the more cakey they will become. Remember that the brownies will continue to cook once removed from the oven!
Whilst the brownies are cooling melt 150g chocolate and 300ml in the microwave in 30 second intervals, stirring in between, this is our ganache done!
Once the brownies have cooled (approximately 1 hour) pour on the ganache, top some more sea salt and put in the fridge to set for 2 hours.
Once set, slice into 9 squares and enjoy!
