Begin by washing all the vegetables for the persian salad and allowing them to dry in a colander or using some kitchen towel.
Finely dice the cucumber by cutting it lengthways into strips. Stack them and cut into small cubes. As shown in my video. Add the cucumber to a large salad bowl
Repeat this with the tomatoes and finally the red onion. Add both to the salad bowl.
Season with lemon juice, dried mint and a generous amount of salt.
Toss to serve and enjoy!
