Begin by peeling your avocado and then slicing it lengthways. Set aside for later.
Using a pastry brush (or just your fingers if you don't have one) rub the olive oil into both sides of your sourdough toast and toast on a medium heat for about 2-3 minutes on each side or until golden brown.
Whilst your bread is toasting, pre heat a frying pan for 2 minutes on a medium-low heat. Add your chilli oil and crack in the egg. Pop the lid on straight away and cook for 2-2½ minutes for a runny yolk or 3-4 minutes for a jammy yolk. Remove the lid then spoon the remaining chilli oil in the pan over the fried egg.
Remove your bread from the heat. Spread on the Boursin cheese, top with your avocado slices and fried egg.
