Pre-heat your oven to 200°/390F
Wash your potatoes thoroughly in cold water and then pat dry. Slice your potatoes into wedges by slicing them in half, and then each half into three. This gives you 6 wedges per potato.
Transfer them to a pot with boiling water and boil for 5 minutes on a medium heat.
In a bowl combine your spices with the rapeseed oil.
Drain the potatoes and transfer them to 2 baking trays lined with parchment paper and make sure that wedges are well spaced.
Spoon your spicy oil onto the wedges and using your fingers rub make sure that the entire surface of each wedge is coated.
Bake the wedges for 25-35 minutes, flip them once halfway through. The cooking time may vary depending on the size of your wedges, so keep a close eye on them!
Remove from the oven and enjoy!
