Begin by cooking your hash browns in your air-fryer or oven, at 200° for 15 minutes or according to the packet instructions
Lay your bagel flat on your chopping board and using a serrated bread knife cut horizontally through the middle using a sawing motion.
Toast your bagel either on the pan with some oil (my preferred way to do it!) or in your toaster
Crack your egg into a preheated pan with some oil, reserving the egg yolk in the shell. Fry the whites for 2-3 minutes on a medium heat.
Place your bagel lid ontop of the egg whites and gently place your egg yolk into the hole in the middle. Add a splash of water into the pan, cover with a lid and cook for a further 2-3 minutes.
On the bottom of your bagel, spread the avocado, season with salt, black pepper and paprika.
On top of the avocado, add your rocket and hash browns. Place your thin slices of mature cheddar on top of the has browns and melt with a blow torch or by placing under the grill.
Crown with your egg-bagel lid and enjoy!
